low carb shake up:
chicken, bacon, mushrooms, broccoli and asparagus
So a lot of times lunches are hard for me. I don’t want to be in the kitchen for long.
Many times I try to use up things I have left over or maybe I have half a bag of something that needs to be used.
This is where this little lunch came about. I had a little broccoli, some asparagus, bacon and chicken left in my fridge to use.
It was a perfect storm to make a low carb lunch!
The best parts? Quick, one pan and using up ingredients that would just go bad.
Directions:
Cut up chicken breast (I used two)
cut up asaragus
cut up broccoli
cut up mushrooms
chop up bacon
heat heavy bottom pan on medium high
place in bacon, turn heat to medium and allow bacon to cook down until crispy
remove bacon
season chicken with Slap Ya Mama seasoning (for two breast I used 1-2tbsp of slap)
place chicken in the pan with bacon grease, if you need more oil in your pan use some oil of your choice (olive, avocado, canola)
remove chicken once cooked
put the veggies in and stir them around
test for seasoning (some seasoning should be left from cooking the chicken, add more as needed)
place all ingredients back into your pan to heat up
serve !
