cajun chicken and sausage scramble
It's hard to try low-carbing in the South, y'all. Everything has a side of rice, potatoes or bread. Oh lord, don't get me going on the bread. I love bread. I could eat it for every meal, all my life. Sigh...
Okay! Anyways, so my dear husband really wanted me to name this Rice-less Jambalaya. But I had nightmares of cajuns lining up down my driveway with bags of rice ready to throw it at me. So, I just can't. I think I'd make a lot of people angry down here.
So it's now a scramble! And it taste like jambalaya. Without rice. *Gasp* Thats as far as I will go with that.

Ingredients:
2 lbs chicken
2 lbs sausage (Smoked garlic manda is what I use)
1/4 cup olive oil
1 stick of butter
2 tbsp slap ya mama
2 cups diced onion
1 tbsp Mrs Dash garlic herb seasoning
Directions:
Cut up sausage into coins
Cut up chicken into bite sized pieces
Mix Slap ya mama and Mrs Dash seasoning in a small bowl and toss with your chicken to coat it
In a large skillet melt 1/2 stick of butter and add 1/4 cup olive oil
Add chicken to the skillet and cook until white on all sides
Add onions and sauté down with the chicken
Add bell peppers
Add sausage
Add the other 1/2 stick of butter
Cook until all meat is done
