hot sausage, asparagus & mushroom risotto
So this risotto combines some of my favorite things. I love hot sausage. Any place that has it when I go out, I just have to have it. Even if it’s just an appetizer. It screams for me and I scream for it! And then mushrooms and asparagus, they are always on my list to get at the store. We all love them at home. So why not throw my favorite things into a big pot of creamy risotto? Eat it as your main dish or a side, either way your tummy will thank you.
Ingredients:
2 links hot sausage, out of the casing
1/3 cup diced onion
1 cup sliced mushrooms
1 cup asparagus tips
6 cups chicken broth
4 tsp slap ya mama
1 tsp garlic powder
1/3 cup dry vermouth
1 cup parmesan
Directions:
In a large sautee pan, turn the heat on medium high
Sautee your hot sausage until cooked
Add the onions and cook until just soft
Add the mushrooms and cook down
Add the risotto and mix it around with the ingredients
Add slap ya mama and garlic powder
Add the wine to deglaze the pan, scraping the brown bits off the bottom
Start adding the chicken broth, one cup at a time
When your rice starts to soak up the chicken broth, add more
Keep stirring
At the very end, taste and adjust any seasonings
Add the parmesan and mix it around
